Was very excited to see this in the mail. Beans came in super fresh and appreciated seeing the roast date!
Not quite the flavor I was looking for as a pour over coffee but have been wonderfully surprised in how tasty and robust it is as a cold brew concentrate: I steep 63g in .5L of water for about 16 hours in a French press, and mixed 1:1 ratio of water when drinking). There’s an earthiness that really stands out and it’s really nice.
The flavor profile is beautiful here. On the nose we’re greeted with banana skin. Sipping away, the notable bittersweet dark chocolate rides under a jackfruit brightness, and is vignetted by a smoky afterglow. Truly a pleasure to extract and drink.
This roast inspired me to do a bit of research into Philippine culture. First I wanted to become familiar as to the traditional Philippine brew of the Liberica bean and Barako coffee, and in brewing this coffee and returning to pour-over again and again, I realized something not exclusive to my senses.
While reading, I learned of a Tagalog term “Alay” which (to the best of my knowledge, and used here with utmost respect intended) means “an offering, made with care”. Though I’m not Filipino, and am not invoking it here as a cultural inheritance, I’ve been lead to become aware of the term through this wonderful coffee, because I had to find a name for what I feel when I drink it.
I digress, this Barako is certainly that: An offering from farm to roaster to brewer as an expression of great care. Let these beans be your window of alay, like they've been mine.
Smooth, resolved, and rich in tone. The warm Kalinga strums a sweet, nutty bass note behind the lead citrusy expression of the Benguet, to coresonate in compelling harmony and surely serenade the palate.

I'm personally reminded of Baklava when I sense the toasty nuttiness, however any weight is uplifted to loft beautifully on the citrus rind pillow that glows on the roof and residual palate. All in, this is a go-to for any brew with milk or black.

Even though it's a light roast, I enjoyed it as an espresso. Mild to the taste but lovely!
I was able to do brew as a pour over and omg, this is crazy! Theres like a a sweetness to it i have never tasted before. And i find it very well balanced. I definitely taste the sweet orange in the beginning and the nuttiness at the end.
Bought a bag for espresso using Breville. It was a tasty cup through and through. Fruity notes w good acidity. Would highly recommend this Filipino bean.
I purchased a bag last week and finally got to make a nice cup this morning. I made it in a French press and all the notes were just wonderful. The coffee came out very robust and smooth. I would’ve drank it black but my stomach can’t handle it so I added milk for texture. This was a a great cup! I am Asian so it’s very exciting and inspiring to see an Asian owned Roastery. I can’t wait to try more bean from this roaster!
I grew up in the area where these coffee beans come from. Everyone who will drink this will get to know part of the “little secret” of the amazing coffee scene of the area.
