Himig is a Filipino word meaning “melody”—a fitting name for a coffee company inspired by the rich sounds, stories, and traditions of the Philippines.

At Himig Coffee Roasters, we are passionate about sharing the beauty of Philippine coffee with the world. We source and roast coffees from different regions of the Philippines, highlighting the unique character of each origin, community, and producer behind every bean.

Our journey is rooted in a simple belief: coffee is more than a drink—it is a story.

The Founder

Robert’s love for coffee began in America—not in the Philippines.

After moving to the United States from Manila in 2013 at 18, Robert spent years working in cafés, where he discovered a passion for coffee and began dreaming of opening a Filipino coffee shop.

Then came a simple question: If the coffee shop was going to be Filipino, shouldn’t the coffee be Filipino too?

That question led Robert to discover Philippine-grown coffee for the first time. He began learning to roast, working with green coffee, and exploring the stories of the farmers and communities behind each harvest.

In January 2025, that journey became Himig Coffee Roasters.

Today, Robert’s mission is to not just simply open a coffee shop. It is to celebrate Philippine coffee, support the people who grow it, and share the story of Filipino coffee with the world.

Roasting Approach

Every coffee we roast at Himig begins with one goal: to bring out the character of the coffee while honoring where it comes from.

I roast each Philippine coffee in small batches, carefully adjusting temperature, airflow, and development to highlight the unique qualities of each origin. I roast, cup, take notes, and refine the profile until I feel the coffee truly represents its potential.

There’s no one roast profile for every coffee. Each origin, variety, and harvest tells a different story—and my job is to listen.
